Crawfish Enchiladas
These enchiladas will melt in your mouth. They are a perfect blend of Mexican and Louisiana cuisine. The fresh Louisiana crawfish tails are sauteed with onions and bell peppers, then infused with a mixture of Mexican cheeses and seasonings. They are hand rolled in flour or wheat tortillas (your choice) and topped with green onions. If your children run at the sight of something green on their food, I can leave off the green onions. And, they will never know that there are onions and bell peppers in the enchiladas - I chop them VERY small. $26.00 flour or $27.00 wheat
