Tuesday, November 10th Delivery


Eggplant Parmesan with Ground Sausage
I created this dish one night when my husband freaked out at the thought of not having any meat for dinner. Men! I had already prepared the eggplant, and the marinara was on the stove simmering. So, what was I going to do? I had half a pound of Jimmy Dean sausage in the refrigerator, so I decided to brown it and layer it with the eggplant and provolone cheese. Not too sure how this was going to turn out, but at least I got to finish what I started cooking and I satisfied Mike's need for meat. Actually, it was wonderful! The ground sausage was not too overpowering, just a nice added layer of flavor. The eggplant was moist in the middle and crisp on the outside. The fresh basil (from my garden) in the marinara really made a difference. It really was delicious. My parents ate dinner with us that night and loved it. Mama is not a big fan of eggplant, but she loved this version of the traditional dish. Serve it with an Italian salad and a glass of your favorite red wine. $25.00


King Ranch Chicken
This is a Mexican inspired dish that incorporates tomatoes, lots of cheese, fresh cilantro, and Mexican spices (and of course Panola Hot Sauce). It will leave you very satisfied, and don't worry it's not too spicy. Think chicken enchilada lasagna style! The chicken is seasoned with Panola Poultry seasoning and roasted to perfection, then combined with fresh, organic herbs form my garden and layered with tortillas, cheese, onions, and tomatoes.
