Portobello Mushroom Bisque
This soup would be a great gift for someone who has done something special for you or great as a meal if front of the fireplace watching a movie.
I make this soup by sauteing onions and baby portobello mushrooms then adding chicken broth and half and half. I let it simmer so the flavors can marry. It is seasoned with fresh thyme from my garden, Panola Clearly Hot Sauce, Panola Jalapeno Sauce, and lemon zest. Don't let the hot sauces scare you. The Clearly Hot Sauce isn't a "hot" hot sauce. It truly is a flavor enhancer. By adding this sauce to your food it allows all the flavors to come out without making the dish spicy. Now, the Panola Jalapeno Sauce adds a little heat but the flavor it adds is unbelievable. The mild jalapeno flavor with the creaminess of the soup is a perfect accompaniment of flavors. I like to top the soup with croutons and parmesan cheese and place it under a broiler for a few minutes. Then drizzle a tad bit of olive oil before serving for an amazing finish to a simple bowl of soup. $12/quart

I make this classic Italian dish with a combination of lean ground beef and lean ground Italian sausage. First, I saute the meat with garlic and onions. Then, I brown the tomato paste before combining it with the meat, which is a key step to making this meat sauce taste so delicious. Once I combine the meat and tomato paste to make the meat sauce I simmer it with plenty of fresh basil (which is also from my garden) Next, I make a homemade creamy bechamel sauce that will knock your socks off. Then I layer the meat sauce, noodles, bechamel sauce, and mozzarella cheese. This is a great dish for the entire family. Serve it with a salad and French bread for a complete and easy meal. $25.00
