Chicken and Andouille Gumbo
October is here, cooler weather is coming and it's gumbo season! When it gets cool outside, there is nothing better to eat then a great bowl of gumbo. Try mine. I know you will love it. $12.00/quart
Creamy Tomato Stuffed Chicken Breast
I take 1 pound of chicken breast, which is 3 or 4 breast depending on their size, and flatten them to 1/4 inch thickness. Then, I top it with cream cheese, sun-dried tomato, and fresh basil mixture. I hand roll it and season the outside. All you do is bake it. It is light and savory. I like serving this with a Caprise salad (fresh tomatoes, basil, and fresh water mozzerella). It is light and healthy. Now, my husband on the other hand thinks he needs some type of starch with every meal. So, I cook him some rice, pasta or potatoes. A nice Pinot Noir or Chardonnay is a great accompaniment to this dish. $28.50
