King Ranch Chicken
If you haven't had this casserole, it is a Mexican inspired dish that incorporates tomatoes, lots of cheese, cilantro, and Mexican spices. It will leave you very satisfied. Think chicken enchilada lasagna style! The chicken is seasoned and roasted to perfection, then combined with fresh, organic herbs from my garden and layered with tortillas, cheese, onions, and tomatoes. Stuffed Pasta Shells
These pasta shells are hand stuffed with lean ground beef and spinach leaves. Once filled (almost) I infuse them with a homemade cream sauce. The flavor is unbelievable and each bite is special knowing that my children hand picked the basil and parsley from our herb garden. The stuffed pasta shells are topped with homemade marinara from our kitchen, and don't worry, Carter and Ben made sure the herbs hit the marinara too. :) Serve it with your favorite Italian salad and a glass of red wine.
