Crawfish Enchiladas
These enchiladas melt in your mouth - they are a perfect blend of Cajun and Mexican cuisine. The fresh Louisiana Crawfish tails are sauteed with onions and bell peppers (grown from my organic garden) then infused with a mixture of Mexican cheeses and seasonings. They are hand rolled in flour or wheat tortillas (your choice) and topped with cheese and green onions. If your children run at the sight of something green on their food, I can leave off the green onions. And, they will never know that there are onions and bell peppers in the enchiladas - I chop them VERY small. $24.85 (flour) $25.85 (wheat)
Cheesy Chicken Spaghetti
One of my most requested dishes. If you haven't tried it yet, well it is time! Also, it would be a great dish to take to the beach - kids love it. Serve it with your child's favorite vegetable, salad and French bread (for sopping up the cheese sauce). $22.00 (regular pasta) $23.00 (wheat)
