Creamy Tomato Stuffed Chicken Breast
I take 1 pound of chicken breast, which is 3 or 4 breast depending on their size, flatten them to 1/4 inch thickness. Then top it with a cream cheese, sun-dried tomato, and fresh basil mixture. I then hand roll it and season the outside. All you do is bake it. It is light and savory. I like serving this with a Caprise salad (fresh tomatoes, basil and fresh water mozzerella). It is light and healthy. Now, my husband on the other hand usually wants a starch. So, I cook him some rice, pasta, or potatoes. Try this one. I think you will like it. $28.50
